We are Varinder and Anita. We first visited Paso Robles in the winter of 2015 as part of an educational tour. It was a breath of fresh air. The land, the wine, the people - all had captivated and captured us. Long story, really short: We had to be in Paso.
In 2017, we found our special place: 50 acres among the scenic hills on the westside of Paso Robles in the Willow Creek District. Breathtakingly beautiful slopes and calcareous soils make it an ideal site for us to plant our vineyard to produce world-class wine. We are now embarking on the task of preparing the land and having 20 acres under vine by spring 2019.
Hand in hand, together we're creating Copia, a boutique winery where we’re making wine one small lot at a time. We currently produce just 450 cases of wine using premium sourced fruit, mostly Rhône inspired and from the Willow Creek and Adelaida Districts and Edna Valley. We are happy to share the details of our first release - the 2016 vintage, available right now online and at our downtown tasting room at Paso Underground.
