Tasting Notes
2020's Copia Cabernet Sauvignon continues to take a walk on the wild side with 22% Syrah rounding out the blend. Aromas of cassis mingle with dark chocolate, licorice, graphite and bay leaf. Textured, opulent and with an extended finish, this wine has already seen a year of bottle age. It will continue to develop its complex expression for years to come.
Winemaking
Grapes were carefully cluster sorted, 100% destemmed and fermented in stainless steel. After a cold maceration, daily punch-downs, pump-overs and pneumotage were conducted.
